Ingredients (Serves 4)
1 1/2 tablespoons olive oil
1/3 cup onion, thinly diced
1 clove garlic, minced
2 cups of your favorite barbecue sauce
Salt and pepper to taste
1/2 teaspoon garlic powder
Salt and pepper to taste
4 skinless, boneless chicken breast halves

How to Cook BBQ Chicken
Before grilling barbeque chicken, preheat your outdoor grill for high heat (600 - 800 degrees F). If you're using charcoal, pile up the charcoal on only one side of your grill.
The charcoal is ready when you can hold the palm of your hand two inches above the grate for only 1 - 2 seconds before pulling away.
Meanwhile, in a skillet over medium heat, warm olive oil. Saute onion and garlic until tender. Stir in barbecue sauce and cook until thickened (3 - 5 minutes). Remove from heat and allow to cool.
Rub chicken breasts with garlic powder, salt and pepper. Then dip chicken in sauce and turn to coat.
Wipe the grill grate with olive oil, using a rag or paper towel. This will keep your barbecue chicken breasts from sticking during the grilling process.
Place chicken on the grill in an organized manner with a little room between each piece to allow air to circulate. If you're using charcoal, place barbeque chicken directly over the coals.Cover grill.
How Long to Barbecue Chicken
Grill for about 5 minutes or until good grill marks appear. Then flip each piece over and grill for 3 minutes more.
Now that you've seared the chicken, turn the heat down to medium if you're gas grilling. If you're using charcoal, move the chicken to indirect heat (the side of your grill with no charcoals). Cover grill.
Continue grilling the barbequed chicken 3 - 5 minutes more per side or until juices run clear (internal temperature should be 170 - 180 degrees F).

Rub chicken breasts with garlic powder, salt and pepper then place them in a shallow baking dish. Cover and bake 1 hour at 350 degrees F (175 degrees C).
Meanwhile, prepare the barbecue sauce in a saucepan as directed above.
After cooking barbeque chicken for an hour, remove baking dish from oven and drain any fat from dish. Pour the barbecue sauce evenly over the chicken breasts, turning to coat, and bake uncovered for 30 minutes at 350 degrees F (175 degrees C). Remove and serve.
