Thai Chicken Burger Recipe
Ingredients (Serves 6)
Time: Under 1 Hour
In a food processor, blend the garlic, ginger, jalapeno peppper, 1/4 cup cilantro, 1/4 cup green onions, and 1/3 cup Thai peanut sauce.
In a medium bowl, mix together the ground chicken, blended Thai peanut mixture, bread crumbs, salt, and the juice from two of the lime wedges. Don't overmix. With a light touch, form into 6 ground chicken patties no more than 1 inch thick. Refrigerate.
In another medium bowl, whisk together the remaining cilantro, green onions, Thai peanut sauce, the juice from the other two lime wedges, and mayo. Add the cole slaw and toss until everything is well coated. Refrigerate.
Preheat the grill as follows:
Direct heat, medium-high
(425 - 450 degrees F)
Direct heat, light ash, grate should be on lowest setting
Direct heat, light ash, 3 - 4 inches deep, grate should be 2 inches above the fire
Clean and oil grate. Grill chicken patties 15 - 20 minutes total, covered, until opaque throughout. Flip once at halfway point. Your burgers are done when they reach an internal temperature of 170 - 180 degrees F.
Serve burgers with prepared cole slaw inside toasted whole wheat buns or pita pockets.
