Quick and Easy Grilled Salmon Directions

Your fish will grill better if it starts at room temperature. So before grilling, allow your salmon to rest at room temperature at least 20 minutes.

Clean and lightly oil grill grate. Preheat for medium heat (300-400 degrees F). If you're using charcoal, the grill is ready when you can hold the palm of your hand two inches above the grate for only 4 -5 seconds before pulling away.

Meanwhile, season both sides of a skinless salmon fillet or steak with one of our easy rubs. If you're using skin on salmon, you only get one side to flavor. So add a little extra seasoning to make sure it's enough.

Using your hands, lightly pat the spices into the meat so they are firmly attached and won't rub off during grilling. Then coat your salmon with olive oil using a brush or your hands.

This is the foundation of the tasty seasoned crust on your grilled salmon - spices covered in oil then grilled. That's really all there is to it.

The oil will keep the meat from sticking to the grill and help the salmon form those nice seared grill marks that enhance the flavor of grilled meats.

To grill salmon fillets, place them face down on the grill directly over the flames or coals (direct heat). The skin side should be up (flesh side facing the flames or hot coals). This will sear it and seal in moisture. Cover your grill for 4 - 5 minutes. Then use a spatula to flip to the skin side.

Grill for another 4 - 5 minutes. Total cooking time 8 - 10 minutes. The fatty skin of the salmon fillet will protect the meat from overdrying even though the skin itself may become charred in the process. It is done when it flakes easily with a fork.

Brush on some butter and add a splash of fresh lemon juice. Then remove it from the grill. To do this, slip a spatula between the skin and the meat and lift the salmon away from the skin leaving the skin stuck to the grill. If you want to serve it with the skin still on, a spatula is still the tool to remove it from the grill.

To grill salmon steaks, grill each side 4 - 5 minutes directly over the flames or coals (direct heat). Total cooking time should be 8 - 10 minutes. Just before removing your grilled salmon, brush on some butter and add a splash of fresh lemon juice.
