Grilling Acorn Squash

This grilled acorn squash with a brown sugar butter glaze makes for some serious comfort food. Try it and tell us what you think at the bottom of this page.

Recipe for Grilling Acorn Squash

(Serves 8)
Time: Under 30 Minutes

  • 4 acorn squash, halved lengthwise, seeds and membrane removed

  • 1/2 cup melted butter

  • Salt and pepper

  • 3/4 cup packed brown sugar

  • 1 teaspoon ground cinnamon

  • 1 teaspoon ground nutmeg

  • 1/8 teaspoon allspice
  • Directions for Grilling Acorn Squash

    Preheat oven to 350 degrees F.

    Brush the cut side of each acorn squash with some of the butter and sprinkle lightly with salt and pepper. Place squash, cut-side down, on a baking sheet and bake 30 minutes. It should be just barely tender.

    Meanwhile, preheat your grill for medium-high heat (400 degrees F). The grill is ready when you can only keep the palm of your hand two inches above the grate for about 3 seconds before pulling away.

    In a small saucepan over high heat, add the melted butter, brown sugar, cinnamon, nutmeg, and allspice. Cook and stir frequently until it reduces to about 1 cup.

    Place the squash, cut side up, on the grill and brush it with the brown sugar glaze. Grilled acorn squash should cook for 10 minutes. Use tongs to turn it once, onto the cut side, midway though grilling. It is done when it is tender and the glaze has caramelized. Remove from grill. Brush with remaining glaze and serve warm.
