While grilled artichokes require some preparation, they are well worth it. This grilled artichoke recipe makes for an elegant presentation and our garlic lemon marinade makes them flavorful and worth the effort. Try it and tell us what you think at the bottom of this page.
(Serves 4)
Time: 2 Hours

  • 2 large artichokes

  • 1 lemon, quartered

  • 2/3 cup extra virgin olive oil

  • 4 cloves garlic, chopped

  • 1 teaspoon salt

  • 1/2 teaspoon ground black pepper
  • Directions for Grilling Artichoke

    To prep your artichokes for grilling: cut them in half (lengthwise), remove the choke and any discolored leaves, and snip the tips off the remaining leaves (this avoids excessive charring).

    To prevent the artichokes from turning brown, squeeze the juice from one of the lemon wedges into a large bowl. Add the artichoke halves and cover them with cold water.

    Bring a large pot of water to a boil. Add artichokes and cook for 20 minutes.

    Grilling Tip:
    One way to keep your artichokes from floating to the surface while boiling is to place a steamer on top of them. Or just skip boiling, and steam them for the same amount of time.

    Drain them upside down on a paper towel and refrigerate for 1 hour before grilling.

    Meanwhile, preheat your grill to medium-high heat (400 degrees F). The grill is ready when you can only keep the palm of your hand two inches above the grate for about 3 seconds before pulling away.

    In a small blender or food processor, combine the juice from the remaining lemon wedges, the olive oil, garlic, salt and pepper. Blend at least 15 seconds. Brush the artichokes with the marinade.

    Grilling Tip:
    Whenever you have enough marinade to warrant it, blend the ingredients together. Don’t whisk them. This ensures that everything combines thoroughly and no single flavor (usually the olive oil) dominates the marinade.

    Lightly oil grate and grill artichokes for 5 to 10 minutes, brushing with marinade and turning frequently just long enough to put some char on them. Remove from heat, drizzle grilled artichokes with remaining garlic lemon marinade, and serve immediately.
