A savory grilled cornish game hens recipe with a garlic lemon rosemary rub and a rich white wine basting sauce. Try it and tell us what you think at the bottom of this page.

Ingredients (Serves 6)
Time: 1 1/2 Hours

  • 1 tablespoon garlic powder

  • 1 tablespoon lemon pepper

  • 1 tablespoon rosemary, rushed

  • 1/4 teaspoon salt

  • 1/4 teaspoon pepper

  • 4 (1 1 /2 pounds) Cornish game hens

  • 4 tablespoons olive oil, divided

  • 1/3 cup white wine

  • 1/3 cup low-sodium chicken broth

  • 2 tablespoons butter

  • 1 lemon (for freshly squeezed lemon juice)

  • Cooking Cornish Game Hens on the BBQ

    Start out with your game hens at room temperature.

    In a small bowl, thoroughly mix together the garlic powder, lemon pepper, crushed rosemary, salt and pepper.

    Rub each cornish game hen with 1 tablespoon of olive oil and 2 1/2 teaspoons of spice mix.

    In a small sauce pan over medium heat, stir together the white wine, chicken broth, and butter. Heat through and continue stirring until butter is melted and everything is well mixed.

    Preheat grill for medium high heat.

    Lightly oil grate. Place game hens breast side up over indirect heat. Cover grill. Grilled Cornish game hens take about 1 hour to cook on the bbq.

    Turn them occasionally while grilling and brush on the white wine mixture. They are done when the juices run clear and centers are no longer pink (internal temperature 170 degrees F).
