Grilled Lamb Kebabs

Greek grilled lamb kabobs recipe in a garlic herb marinade with onions, tomatoes, zucchini, and mushrooms. Plus a tasty Greek cucumber sauce for dipping your grilled lamb kebabs. Try 'em and tell us what you think at the bottom of this page.

Lamb Kabob Recipe

Ingredients (Serves 4)
Time: 2 1/2 Hours (includes marinating)

  • 1/2 cup lemon juice


  • 1 1/2 tablespoons olive oil


  • 2 tablespoons dried oregano


  • 2 teaspoons dried rosemary, crushed


  • 1 teaspoon dried thyme


  • 6 garlic cloves, minced


  • 1 pound lean lamb, trimmed of fat and cut into 1 inch cubes


  • 16 cherry tomatoes


  • 1 large onion, cut into 1-inch wedges


  • 1 zucchini but into thick slices


  • 1/2 pound mushrooms, stems removed


  • Wooden skewers (presoaked), or metal skewers


  • Greek Cucumber Dipping Sauce
    (optional but highly recommended)


  • 2 small cucumbers, peeled, seeded, and finely diced (or pickling cucumbers)


  • 1/2 teaspoon salt


  • 1/8 teaspoon pepper


  • 2/3 cup low-fat plain yogurt


  • 1/2 teaspoon minced fresh mint leaves


  • 1/2 teaspoon minced fresh dill


  • 1 teaspoon minced fresh onion


  • How to Grill Lamb Kabobs

    In a small bowl, whisk together the lemon juice, olive oil, oregano, rosemary, thyme, and minced garlic. Set aside 1/4 cup for basting, cover, and refrigerate.

    Pour the remaining marinade into a large resealable plastic bag; add the lamb, onions, tomatoes, and zucchini. Remove excess air, seal bag, and turn to coat. Marinate in the refrigerator for 2 hours, turning occasionally. Add mushrooms last 15 minutes of marinating (the longer they marinate the slimier they get).

    Cucumber sauce: In a serving bowl, combine the yogurt, mint, dill, and onion. Mix in the drained cucumber. Chill in fridge.

    Clean and preheat grill for medium heat (350 - 375 degrees F).

    Drain and discard marinade. Alternately thread lamb, tomatoes, onions, zucchini, and mushrooms onto skewers.

    Oil grill grate and grill kabobs, uncovered, over medium heat for 3 minutes on each side. Baste with reserved marinade. Grill 8-10 minutes longer or until meat reaches desired doneness, turning and basting frequently.

    Serve grilled lamb kebabs with chilled Greek cucumber dipping sauce.
