Grilled Oysters Recipe

How to BBQ Oysters

Grilling Tips

Preheat grill for high heat (500 degrees F).

Place oysters individually on the grill without overlapping them. Most only take about 3 minutes to grill completely. The cool thing about oysters is that they will "tell" when they are finished cooking on the grill by opening up (5 - 10 minutes).

They will be hot so be sure to wear heavy gloves (leather works good) while handling the shells to prevent yourself from getting burned!

To shuck the oysters, remove them from the grill and pry off the top shell. Slide a knife between the oyster and shell to disconnect.

To serve, leave the oyster in the shell, and top with your favorite dressing (see recipes below).


Grilled Oyster Stew Recipe with Artichokes

Ingredients (Serves 4 - 6)
Time: Under 1 Hour

  • 20 grilled oysters (see grilling instructions above)


  • 1/2 cup butter


  • 1/4 cup chopped onion


  • 1/4 cup chopped celery


  • 1/4 cup finely chopped shallots


  • 1 garlic clove, minced


  • 1/2 cup chicken stock


  • 1 teaspoon salt


  • 1/2 teaspoon pepper


  • 1/8 teaspoon cayenne pepper


  • 2 cups half and half


  • 1 (8oz) can of quartered artichoke hearts, drained


  • Directions for Oyster Stew Recipe

    Warm your soup pot over medium heat. Add the butter and saute the onion, celery, and shallots until everything is tender.

    Add the chicken stock, salt, pepper, cayenne pepper, half and half, artichoke hears, and oysters.

    Bring to a boil and simmer 20 minutes until oyster stew is heated through and the flavors have all blended.


    Grilled Oyster Dressing Recipes


    Spicy Garlic Oyster Dressing

    Ingredients (Covers 20)

  • 2/3 cup butter, melted


  • 4 cloves of minced garlic


  • 2 tablespoons minced shallot


  • 2 tablespoons lime juice


  • 2 tablespoons chopped fresh cilantro


  • 2 1/2 tablespoons hot sauce


  • Salt and pepper to taste


  • Using a small blender, mix together all of the ingredients for at least 15 seconds to make sure all the flavors combine. Serve as a dipping sauce or drizzle dressing directly over oysters.


    Simple Dressing

    Ingredients (Covers 20)

  • 2/3 cup butter, melted


  • 1/3 cup lemon juice


  • 3 tablespoons hot sauce


  • Salt and pepper to taste


  • Using a small blender, mix together all of the ingredients for at least 15 seconds to make sure all the flavors combine. Serve as a dipping sauce or drizzle dressing directly over oysters.
