    Ingredients (Serves 2 - 4)
    Time: 30 Minutes

  • 2 ounces smoked cheese (Gruyere, Gouda, Brie, etc.)

  • 4 slices bacon, cooked and crumbled

  • 1/4 apple, skinned and diced

  • 1/4 cup chopped fresh parsley

  • Pinch ground black pepper

  • 2 (2 1/4 inch thick) center-cut, bone-in pork chops

  • 1 teaspoon olive oil

  • Pinch of salt and pepper

  • How to Grill Stuffed Pork Chops

Preheat for medium heat (300-400 degrees F). If you're using charcoal, the grill is ready when you can hold the palm of your hand two inches above the grate for only 4 -5 seconds before pulling away.

In a small bowl, mix together the cheese, bacon, diced apple, parsley, and a pinch of ground black pepper.

To stuff pork chop lay it flat on a cutting board. Using a sharp knife held parallel to the board, cut a pocket into the pork (go all the way to the bone but leave the sides intact.) Stuff bacon and cheese mixture into the pocket. Close pocket with a toothpick or tie it closed with butcher's twine.

Rub the outside of your stuffed pork chops with olive oil, salt and pepper.

Clean and lightly oil the grill grate. Grill stuffed pork chops directly over medium heat for 5 to 8 minutes per side or until pork is done and cheese has melted. Watch carefully to avoid overcooking.
