Grilled Portobello Burgers and Sandwiches

Grilled Portabella Mushrooms

Ingredients
(Serves 4)
Time: Under 1 Hour

  • 1/4 cup balsamic vinegar
    Grilling Tip:
    Go for the good stuff (over $5). Cheaper versions tend to be sour and overpowering, while quality balsamic vinegar is sweeter and you won't need as much which will make up for the added price.
  • 2 tablespoons extra virgin olive oil


  • 1 tablespoon chopped fresh basil


  • 1 teaspoon dried oregano


  • 3 garlic cloves, minced


  • Salt and pepper (to taste)


  • 4 portabella mushroom caps
  • Directions for Grilled Portobello Mushrooms

    In a small food processor or blender, combine the balsamic vinegar, olive oil, chopped fresh basil, oregano, minced garlic, salt and pepper. Pulse for 10 seconds.

    Grilling Tip:
    Blending rather than whisking your marinades prevents one single flavor from dominating the marinade (usually olive oil).

    Pour the basil, oregano, and garlic vinaigrette into a medium bowl. Add the portabella mushroom caps, smooth side up. Allow to rest at room temperature for 10 minutes, turning twice.

    Grilling Tip:
    Portobello mushrooms are like sponges. So less is more when it comes to marinating them. This avoids the flavors from becoming too overpowering and creating sour, slimy mushrooms.

    Meanwhile, preheat your grill to medium-high heat (400 degrees F). The grill is ready when you can only keep the palm of your hand two inches above the grate for about 3 seconds before pulling away.

    Lightly oil grate and place mushrooms, smooth side up, on the grill (save leftover marinade for basting). Grilled portabella mushrooms take about 6 - 8 minutes per side. Brush frequently with reserved marinade. Serve hot off the grill.

    Grilled Portobello Mushroom Burger

    Turn this side dish into a tasty veggie burger or
    grilled vegetable sandwich.

    Additional Ingredients

  • 1 large white onion, cut into 1/2 inch thick slices


  • Cheese, sliced (Monterey Pepper Jack, Provolone, or Mozzarella


  • Tomato, sliced


  • Spring greens (or lettuce)


  • French Baguette Bread, toasted (for sandwich)


  • Burger Buns (for mushroom burger)

    Add the sliced onion to the marinade with the porotobello mushrooms.

    Grill portabellas along with the onions (onions will take a few minutes longer per side).

    Top each grilled portobello mushroom with a slice of cheese during the last 2 minutes of grilling.

    Between two slices of toasted french baguette bread sandwich the grilled portabella mushrooms and onions along with sliced tomato and spring greens or lettuce to make an awesome grilled vegetable sandwich. Or use buns for a grilled portobello mushroom burger.
