Garlic Parsley Grilled Potatoes Recipe
(Serves 6 - 12)
Time: 40 minutes
Directions for Grilling PotatoesPreheat grill for medium heat (350 degrees F). The grill is ready when you can only keep the palm of your hand two inches above the grate for about 5 seconds before pulling away.
Meanwhile, in a medium sized bowl, toss together the slices of potato and onion along with the olive oil, minced garlic, parsley, salt and pepper until everything is well coated.
Layer 3 large pieces of foil big enough to easily cover everything. Spread out tablespoons of butter onto the top layer of foil (this prevents sticking or burning). On top of the butter alternate slices of potato and red onion. Wrap into a flattened square and seal the edges.
Lightly oil grate and place foil packet over indirect heat (off to the side, not directly over the coals/flame) and cover. It takes about 30 minutes to grill potatoes. Turn once halfway through grilling potatoes time. Serve hot off the grill.
Spice things up by adding 1/4 teaspoon cayenne pepper to the grilled potato mixture.
