Grilling Tips:

Preheat grill for indirect medium-high heat (400 degrees F).

When grilling red snapper be sure to leave the skin on and lightly oil your fish and the grate to prevent sticking.

This type of fish takes about 20 - 25 minutes to cook on the grill. Grill it skin side down and just leave it that way the entire time with the grill covered. Or flip it, just once, half-way through grilling.

It's done when it flakes easily with a fork and releases fairly easily from your grill.

Spicy Cajun Blackened Grilled Red Snapper Recipe

Ingredients (Serves 4 - 6)
Time: 30 Minutes

  • 1 cup butter, melted


  • 2 tablespoons paprika


  • 1 1/2 teaspoons cayenne pepper


  • 1 1/2 teaspoons ground black pepper


  • 1 tablespoon salt


  • 2 teaspoons onion powder


  • 3 teaspoons garlic powder


  • 1 teaspoon dried thyme


  • 1 teaspoon dried oregano


  • 4 (6 ounce) red snapper fish fillets, skin-on


  • Directions for Grilling
    Blackened Red Snapper Fish Fillets

    Preheat grill for medium indirect heat (400 degrees F).

    Meanwhile, in a small bowl whisk together the butter with all of the spices and herbs.

    Brush each red snapper fillet with the cajun butter mixture.

    Place each fish fillet skin side down onto the grate. Cover and grill for 20 - 25 minutes, occasionally brushing with more spicy cajun butter mixture. Do not flip.

    The red snapper is done when the it flakes easily with a fork and can be removed relatively easily from the grill.


    Killer Grilled Red Snapper Fish Tacos Recipe

    Ingredients (Serves 6)
    Time: 30 Minutes

  • 1 pound red snapper fish fillets, skin-on


  • 1/4 cup butter, melted


  • 1/8 teaspoon black pepper


  • 2 garlic cloves, minced


  • 1/2 cup lime juice, divided


  • 4 tablespoons sour cream


  • 4 tablespoons mayonnaise


  • 2 dashes hot pepper sauce


  • 6 (8 inch) flour tortillas, warmed


  • Suggested Toppings


  • Shredded cabbage


  • Chopped cilantro


  • Chopped red onion


  • Directions for Fresh Red Snapper Fish Tacos

    Preheat grill for medium indirect heat (400 degrees F).

    Meanwhile, in a small bowl whisk together the melted butter, pepper, minced garlic, and 1/4 cup of the lime juice.

    Brush the flesh side of your red snapper fish fillets with garlic and lime butter mixture. Reserve leftover marinade to be used during grilling.

    In another bowl, whisk together the remaining 1/4 cup of lime juice, sour cream, mayonnaise, and hot pepper sauce. Refrigerate while grilling your fish.

    Place each fish fillet skin side down onto the grate. Cover and grill for 20 - 25 minutes, occasionally brushing with remaining garlic and lime butter marinade. Do not flip.

    The red snapper is done when the it flakes easily with a fork and can be removed fairly easily from the grill.

    In each tortilla, place a dollop of the chilled spicy sour cream sauce and top with flaked grilled red snapper, shredded cabbage, cilantro, and red onion. Fold over and serve.
