Grilled Yellow Squash Recipes

Grilled Summer Yellow Squash Recipe

Ingredients
(Serves 8)
Time: Under 30 Minutes

  • 4 medium yellow squash


  • 3 tablespoons extra virgin olive oil


  • 2 cloves garlic, minced


  • Salt and pepper (to taste)
  • Directions for Grilling Summer Squash

    Preheat grill for medium heat (350 degrees F).

    Grilling Tip:
    The grill is ready when you can only keep the palm of your hand two inches above the grate for about 5 seconds before pulling away.

    Wash and slice the squash horizontally into 1/2 inch strips.

    Grilling Tip:
    If you are planning on grilling your vegetables directly on the grill grate without a grill basket, foil, or any other grilling accessory then always slice your veggies horizontally into wide strips and place horizontally on your grill. This makes them easier to turn and prevents them from falling through the grate.

    In a small saucepan over medium heat, saute the garlic in the oil just long enough for the garlic to release its flavor (about 1 minute). Brush the garlic oil onto both sides of each slice of squash. Sprinkle each side with salt and pepper to taste.

    Lightly oil grill and place squash slices horizontally onto the grate. Grilled squash takes about 6 - 10 minutes per side to cook depending on desired doneness. Brush occasionally with remaining garlic oil and turn every few minutes to prevent sticking or burning.


    Lemon Marinated
    Grilled Yellow Squash Recipe

    This simple grilled yellow squash recipe is fast, easy, and delicious. It is a quick way to use up your leftover garden vegetables.

    Ingredients
    (Serves 8)
    Time: Under 30 Minutes

  • 2 garlic cloves, minced


  • 1/2 teaspoon ground cumin


  • 1/2 teaspoon paprika


  • 2 tablespoons olive oil


  • 1 tablespoon fresh lemon juice


  • 4 small yellow summer squash
  • Directions for Grilling Yellow Squash

    Preheat grill for medium-high heat (400 degrees F).

    Grilling Tip:
    The grill is ready when you can only keep the palm of your hand two inches above the grate for about 3 seconds before pulling away.

    Whisk together the minced garlic, cumin, paprika, olive oil, and lemon juice. Set aside.

    Halve each yellow squash (no peeling necessary). Brush each half with marinade.

    Lightly oil grate and grill yellow squash halves about 5 minutes per side or until tender. Brush often with the marinade. Serve warm.
