Teriyaki Grilled Vegetable Kabobs

Ingredients

  • 1/4 cup teriyaki sauce


  • 1/4 cup honey


  • 2 garlic cloves, minced


  • 1/8 teaspoon ground ginger


  • 1 red bell pepper, cut into 2 inch pieces


  • 1 green bell pepper, cut into 2 inch pieces


  • 2 large white onions, peeled and chopped for skewers


  • 1/2 pound whole fresh mushrooms


  • Pineapple chunks

    If you are using wooden skewers, presoak them for 30 minutes before grilling to avoid burning them and to make handling easier.
  • Directions for Grilling Marinated Vegetable Kabobs

    In a large bowl thoroughly whisk together the teriyaki sauce, honey, minced garlic, and ginger to combine all the flavors.

    Add the red and green bell pepper, white onions, and pineapple chunks. Stir to thoroughly coat all the vegetables. Allow to marinate at least 2 hours (not more than 4).

    Grilling Tip:
    Don't add the mushrooms until the last 15 minutes of marinating to prevent them from becoming slimy, mushy, and difficult to skewer.

    Preheat grill for medium-high heat (about 425 degrees F). The grill is ready when you can only keep the palm of your hand two inches above the grate for 2 - 3 seconds before pulling away.

    Thread vegetables in alternating order onto skewers leaving a small space between each vegetable. Reserve remaining marinade for basting.

    Lightly oil the grill grate. Grill vegetable kabobs 10 - 15 minutes, turning occasionally and brushing with reserved marinade until everything is tender with some charring.


    Italian Grilled Vegetable Kabobs

    Ingredients

  • 1/3 cup extra virgin olive oil


  • 3 tablespoons lemon juice


  • 1/2 tablespoon dried basil


  • 1/2 tablespoon dried parsley flakes


  • 2 garlic cloves, minced


  • 1 teaspoon dried oregano


  • 3/4 teaspoon salt


  • 1/4 teaspoon pepper


  • 2 red onions, cut into wedges for skewers


  • 2 yellow bell peppers, cut into 2 inch squares


  • 2 medium zucchini, cut into 1 inch thick slices


  • 2 yellow summer squash, cut into 1 inch thick slices


  • 1/2 pound whole fresh mushrooms


  • 1 small container of cherry tomatoes

    If you are using wooden skewers, presoak them for 30 minutes before grilling to avoid burning them and to make handling easier.
  • Directions for Grilled Italian Vegetable Kabobs

    In a gallon size, resealable plastic bag, add the olive oil, lemon juice, dried basil and parsley, minced garlic, dried oregano, salt and pepper. Squish it around to mix it. Add all of the vegetables. Seal an turn until everything is thoroughly coated. Open, remove excess air, seal and refrigerate for 1 hour.

    Preheat grill for medium heat (350 degrees F). The grill is ready when you can only keep the palm of your hand two inches above the grate for about 5 seconds before pulling away.

    Thread vegetables in alternating order onto skewers. Lightly oil grate. Grill vegetable kabobs, uncovered, 10 - 15 minutes, turning occasionally, until tender with some charring.

    Variations

    This marinade is very versatile. Try it with virtually any grilled mixed vegetables you prefer (egg plant, any colored bell peppers, potatoes, broccoli, green beans, carrots, etc.). The possibilities are endless.
