Grilled Whole Turkey Recipe

Ingredients (Serves 18)
Time: 2 1/2 Hours

  • Grill-safe baster

  • Aluminum foil

  • Whole turkey (13 pounds)

  • 1 cup water

  • 1 cup apple juice

  • 1/4 cup chicken bouillon powder

  • 1 tablespoon garlic powder

  • 1 tablespoon onion powder

  • 1 teaspoon paprika

  • 1 1/2 teaspoons poultry seasoning

  • 1 teaspoon chopped parsley

  • Directions for Grilling Whole Turkey

    1. Preheat the grill as follows:

    Gas:
    Indirect, medium-heat
    (325 - 350 degrees F)
Grill-safe drip pan placed anywhere inside grill

    Charcoal:
Indirect heat, medium ash, grate should be on medium setting
Split charcoal bed (about 24 coals per side)
20 replacement coals (pre-burn in charcoal burner before using)
Heavy-duty drip pan placed between the banks of coals

    2. Prepare to bbq whole turkey by removing giblets and trimming excess fat (particularly around the neck). Rinse and pat dry.

    3. In a large roasting pan, whisk together the water, apple juice, bouillon powder, garlic, powder, onion powder, paprika, poultry seasoning, and parsley. Set aside.

    4. Clean and liberally oil your preheated grill.

    5. Barbecue whole turkey over direct heat on both sides to sear skin (about 3 minutes per side).

    6. Place seared turkey in the roasting pan, BREAST-SIDE down. Cover tightly with foil and place on grill over indirect heat.

    7. Close lid. A 13 pound grilled whole turkey takes about 2 hours to cook completely. It's done when an instant-read thermometer inserted into the thigh registers about 170 degrees F.

    8. While barbecuing whole turkey, baste it with the juices in the roasting pan every 30 minutes. The last 30 minutes of grilling, flip the whole turkey over so it's breast-side up and remove foil.

    9. Remove turkey from grill and loosely tent with foil. Let it rest 15 minutes to allow the juices to settle. This way when you cut into it the turkey will be moist, tender, and full of flavor.
