Grilling the perfect steak is easy when you follow our quick tips on grilling steaks.
Best Steaks for GrillingThe best steak for grilling is USDA Prime Aged Beef. If that is not available then go for Choice Beef.
Do not over-season or marinate quality meat. Allow its natural flavor to stand on its own. Save seasonings and marinades for lesser grades, like flank steak.
Size matters. The best steaks for grilling should be 1 - 1 1/2 inches thick because thinner cuts will dry out during grilling.
Leaner is not better. There should be some marbling (fat) throughout the steak because it adds flavor. If you are grilling a lean cut of steak then be sure to marinate it (the longer the better up to 24 hours). Marinating will tenderize the meat and add flavor.
Whether grilling frozen steaks or fresh, all meat should be brought to room temperature before grilling.
How to Grill SteaksGrilling the perfect steak requires a lot of heat. Preheat your grill to
600 - 800 degrees F and maintain this temperature for at least 30 minutes prior to grilling.
No grill thermometer? The grill is ready when you can hold the open palm of your hand 1 - 2 inches above the grill grate for only 1 - 2 seconds before pulling away.
Just before placing your steaks on the grill, lightly oil the grate. This prevents sticking and cracking which can cause your meat to dry out.
Place steaks on the grill and cover to maintain heat. Have a sprayer handy to avoid flare-ups.
Use a spatula or tongs to flip your steak. Do not use a fork because it will cause juices to leak out. To preserve juices, once is enough when it comes to flipping a perfectly grilled steak. Flip it halfway through the grilling time for your preferred doneness.
Steak Grilling Time:
Rare 10 - 12 minutes
Medium 12 - 14 minutes
Well 14 - 18 minutes
(Steak grilling time is based on 1 - 1 1/2 inch thickness. Grilling time for steak should be adjusted for thicker or thinner cuts.)
Use the press test to see if your steak is done. Press on it with the edge of your spatula or tongs. It will depress easily if it's rare, offer some resistance if it's medium, or be firm if it's well done.
While we recommend the press test to preserve juices you can use a meat thermometer:
Rare 125 degrees
Medium 140 degrees
Well 170 degrees
