Tips for Grilling Lamb Chops

At the store, go for lamb loin chops instead of rib chops. Chops from the loin are less expensive, have less bone, and are more tender than rib chops.

Use a meat thermometer to determine the grilled lamb chops internal temperature.

135 degrees F = medium-rare (lamb chops should be reddish pink in the center). This is the recommended temperature for optimum moisture and flavor without gaminess.

145 degrees F = medium-done

155 degrees F = well-done
If you like your meat well-done then soak the lamb chops in milk 1 hour before applying rub. This will help to reduce the gaminess flavor.

  • 1/4 teaspoon allspice

  • 2 teaspoons salt

  • 1/2 teaspoon black pepper

  • 4 cloves of garlic, minced

  • 3 onions, thinly sliced

  • 2 tablespoons olive oil

  • 2 pounds lamb chops

  • Aluminum foil

  • How to Grill Lamb Chops

In a large resealable plastic bag, add the lemon juice, allspice, salt, pepper, minced garlic, sliced onions, and olive oil. Squish around until the salt has dissolved. Add lamb, remove excess air, and seal. Turn to coat lamb and marinate in refrigerator for 2 hours (turn occasionally).

    Preheat grill for direct, medium-high heat (400 - 425 degrees F).

Remove lamb and onions from the marinade and discard leftover marinade. Wrap the exposed ends of the lamb chop bones with aluminum foil to keep them from burning.

Place two sheets of foil on top of each other and spray top with cooking spray. Place onions on top of foil then crimp the edges to create a shallow pan.

Lightly oil grill grate. Place meat and foil pan of onions on the grill until chops reach desired doneness (5 - 8 minutes per side). Turn onions throughout grilling process.

Serve chops topped with the grilled onions.
