  • 2 tablespoons minced garlic

  • 2 tablespoons chopped fresh rosemary

  • 1 teaspoon Worcestershire sauce (optional)

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 2 shallots, coarsely chopped

  • How to Grill Lamb Steak

In a small blender, add the olive oil, balsamic vinegar, minced garlic, rosemary, Worcestershire sauce, salt and pepper. Blend about 15 seconds so that all the flavors thoroughly combine.

In a large resealable plastic bag, add the marinade, steaks of lamb, and chopped shallots. Remove excess air, seal, and refrigerate 2 hours. Turning occasionally to coat all sides of steaks.

    Preheat grill for direct, medium-high heat (400 - 450 degrees F).

Remove lambs steaks from marinade (okay if some of the shallots stick to the steaks). Set-aside left over marinade.

Lightly oil grill grate and grill steaks of lamb 5 - 8 minutes per side or to desired level of doneness.

Remove from grill and allow to rest 5 minutes so the juices can settle.

Meanwhile, in a saucepan over medium-high heat, saute shallots in 2 tablespoons of leftover marinade until they are tender and caramelized. Serve steaks topped with sauteed shallots.
