Grilled Venison Burger Recipe

Ingredients (Serves 6)
Time: Under 1 Hour

  • 6 slices bacon, finely chopped


  • 2 cloves of garlic, minced


  • 2 shallots, minced


  • 1/2 green apple, shredded


  • 2 lbs ground venison


  • 1/2 teaspoon dried thyme


  • 1 1/2 teaspoons dried rosemary, crushed


  • 1 teaspoon salt


  • ½ teaspoon black pepper


  • 1 egg, beaten


  • 1 cup crumbled blue cheese


  • 6 hamburger buns, split and toasted


  • Grilling Instructions

    Cook chopped bacon in a skillet over medium heat until browned and crispy. Remove bacon to a large heatproof bowl.

    In the same skillet, saute the garlic, onion, and the shredded apple in the bacon grease (about 2 minutes). Pour everything, including the grease, over the bacon. Allow to cool.

    Once cool, mix in the ground venison, thyme, rosemary, salt, pepper, and beaten egg. Don't over mix. With a light tough form 12 burger patties no more than 1/2 inch thick. Refrigerate at least 30 minutes.

    Preheat the grill as follows:

    Gas:
    Direct heat, medium-high
    (425 - 450 degrees F)

    Charcoal:
    Direct heat, light ash, grate should be on lowest setting

    Wood:
    Direct heat, light ash, 3 - 4 inches deep, grate should be 2 inches above the fire

    Before grilling, place crumbled blue cheese in the middle of 6 of the venison patties, place remaining 6 patties on top, press together, and seal edges well. This will keep the blue cheese from oozing out onto your grill and making a mess.

    Clean and lightly oil grill grate. Grill blue cheese stuffed venison burger patties, covered, 8 - 10 minutes total, flipping once halfway through.

    Grilling Tip:
    Burgers made with venison have a habit of drying out on the grill. Place a grill safe bowl filled with 1 cup apple juice inside the grill during the cooking process. This will help your burgers retain moisture and add flavor that compliments the other ingredients in this recipe.

    Remove your burgers from the grill once they are at your desired level of doneness.

    Allow them to rest a few minutes before serving to let the juices settle.

    These burgers taste great topped with some grilled onions. Try 'em with a side of our
